Extraction: it is a microbial gum obtained from the aerobic fermentation of glucose or lactose. It is also known as a microbiological gelling agent.

Benefits: it does not suffer alterations in its properties with changes in temperature. It acts as a suspending agent and emulsifier, keeping the oil and water phases together at all times.
